Vegan friends, I need help!

The final paper for my college english class is a persuasive paper. I have made countless papers and speeches on going vegan but now I want this paper to be about why veganism is important. However, due to my work over-scheduling me, I have little time to do the amazing work I was hoping to with this paper. 

Any and ALL help would be awesome. I’m mostly just asking for any links or sources I can go to that has great information about things related to that subject, on both sides of the spectrum. I have seen people post links to info about going vegan and such before but of course once I need it, it can not be found! 

I hope I am not the only person who has been here. Any warm-hearted person that helps me find some good information and research I will definitely send them a goody-bag of vegan treats. Because I love you that much and I’m that desperate. But mostly because it’s Christmas and hey everyone likes vegan treats.

November 9th

Breakfast- Overnight oats with strawberries, blueberries and cinnamon (PERFECT! read below)

Lunch- Veggie stir-fry with hoisin sauce and a corn bread muffie

Snack- Peanut butter chocolate chia bar, celery with peanut butter and cranberries

Dinner- Sweet potato, broccoli, and a veggie dog

Sorry for spamming so many days at once! Just wanted to catch up. Today was really good. Loved my breakfast and dinner! Feeling healthier :)

I had tried making overnight oats before and thought it was a super cool idea but they turned out very oaty (like they needed to absorb more, not soft) and it was still liquid-y after a whole night. I used just almond milk and I didn’t like how cold it was and heating it up didn’t solve my problem. 

This time I found a recipe using half milk and half yogurt. So, I used the last bit of my vanilla coconut yogurt, and 1/4 c of the pumpkin spice coconut milk and added some flax meal. it came out BEAUTIFULLY. It was super thick and moist and FULL of flavor! I had planned on heating it up this morning but decided it was perfect on it’s own, I am so happy! :) 

November 8th

Breakfast- Mini frosted wheaties with almond milk and blueberries

Snack- Cookies and cream Z-bar

Lunch- Tortilla soup, crackers, fresh carrot lemon juice

Snack- Celery with peanut butter and cranberries

Dinner- Leftover night! Little bit of Amy’s chili with a corn bread muffie, toast with tofutti cream cheese and strawberry preserves. 

Another day of training and school. Was very busy. I’m just excited to get adjusted to my new, fuller schedule with work and school! 

November 7th

Breakfast- Oatmeal with pumpkin spice coconut milk, strawberries and blueberries

Snack- Caramel nut brownie Luna bar

Lunch- Amy’s bean burrito and salsa

Dinner- Veggie stir-fry with hoisin sauce and rice

Sorry I’ve been gone awhile! Guess this challenge has been a little bit harder than I thought. It doesn’t seem like anyone is reading these so I’ll probably stop ahah. Anyway! This day was my first day of training at my new job at Nordstrom and that is why I have been busy and not on here. Had the Luna bar during my morning break during training, and the stir-fry was wonderful and super easy (and cheap!) Will be making again :) It was just a frozen veggie stir-fry mix and 1/2c organic hoisin sauce!

November 5th

Breakfast- Homemade banana oatmeal with berries and pumpkin spice coconut milk

Lunch- Veggie dog, cauliflower mash with veggies

Pre-workout snack- white chocolate protein bar

Dinner- Quesadilla with sprouted grain tortilla, daiya cheese, tomato, green pepper, mushroom, and vegan taco “meat”, broccoli

Sorry I took so long tonight! Today was my first day at my new job at Nordstrom! Well, it was training, first real day is saturday! But hey yeah it went really well I’m excited :) 

I’ll be sharing the recipe for the taco meat soon!

November 4th

Breakfast- Organic Oatmeal with pumpkin spice coconut milk, strawberries, and banana

Lunch- Salad with papaya poppyseed dressing and dried cranberries, corn bread muffie

Post-Workout snack- Pistachios, red grapes, corn thin with pumpkin butter

Dinner- Rice with mixed veggies and liquid aminos

After working out so much I have a ton of extra calories to have a snack, just trying to decide what right now!

Also this mornings breakfast was the best I’ve had in awhile! I stepped away from oatmeal for awhile because every other time or more I made oatmeal I would not be very happy with it and would add a bunch of sweetener or something. But this time the pumpkin spice milk MADE IT. It was so so good and perfect, will definitely be making more often! :)

Lunch- Salad with papaya poppyseed dressing and dried cranberries, pistachios, and a corn bread muffie

Post-workout snack- Perfect food super greens powder with strawberry, banana, and almond coconut milk

Dinner- Spaghetti with marinara and mozzarella daiya

Food Dehydrators

So, I’m looking on Amazon at food dehydrators too see what I want for Christmas. I figured yes they are expensive. They are between 30-300$ and I have no clue what would be best. 

Who has a dehydrator or knows what I should be looking for? Suggestions?

November 2nd

Lunch- Miso ramen cup with red grapes and a corn bread muffie

Post-Workout snack- Almond-coconut milk with Garden of Life chocolate raw protein powder

Dinner- Sprouted grain tortilla with cheddar and mozzarella daiya, green pepper, mushroom, and tomato, Rice and beans

The quesadilla I had for dinner was phenomenal! Totally on a whim, will be making it more! So perfect.

November 1st

First day of my new feature, and it’s World Vegan Day! How cool! :) 

So, here is what I ate today!

Breakfast- Organic frosted mini wheaties with blueberries, raspberries, and almond coconut milk

Snack- Fresh roasted pumpkin seeds, pistachios, and dried cranberries

Lunch- Vegan chili dog made with Annie’s chili and a lightlife smartdog 

Snack- Red grapes

Dinner- Mashed cauliflower with peas, carrot, and a corn bread muffin.

Snack- Kettle corn

I’ll post the recipe for the mashed cauliflower this weekend! :)
